Organic vinegar made from Pedro Ximenez sweet wine using the criaderas and soleras system. Ideal for salads with cheese or seafood, or for macerating fruit such as strawberries. Sensory analysis- Dense, dark mahogany color turning jet black and iodized reflections. Intense aroma of raisins and caramel with wood notes from its aging in oak casks. Very balanced and persistent sweet and sour flavor, very special.
