Iberian ham labels describe both breed percentage and feeding category. Read those details together; “Iberian” does not automatically mean 100% Iberian breed or bellota.
The seal colours
| Seal | Category |
|---|---|
| Black | Bellota, 100% Iberian |
| Red | Bellota Iberian |
| Green | Cebo de campo Iberian |
| White | Cebo Iberian |
Check the rest of the label
Look for the stated breed percentage, producer, format, net weight and curing information. When buying slices, use the packaging information rather than expecting a hoof seal on the pack.
Choose by format
For a first tasting, compare clearly labelled sliced packs. For a whole leg, consider carving equipment, storage and the number of guests before ordering.
