Check whether a product is labelled certified Manchego or Manchego-style sheep's milk cheese. Those descriptions should not be used interchangeably when choosing a cheese.

For a protected Manchego product, check the actual designation and certification on its label. A rind pattern, shop category or Spanish-sounding name is not enough to establish certification.

Try the six- and twelve-month sheep's milk cheeses with the same plain accompaniments. Taste a piece on its own before adding quince paste, jam or nuts.
Build a simple board
Choose a firm aged cheese and a contrasting milder style, then add breadsticks, olives and quince paste. Keep almonds and other allergens separate when guests need that.
Storage and serving
Follow the cheese label's refrigeration and handling instructions. Cut only what you need for the meal and put the remaining cheese back in its required storage conditions.
