Anchovies vs Boquerones: How to Choose and Serve Them

Salt-cured anchovies and boquerones offer two different preparations of small fish. Choose ready-prepared products and follow the refrigeration instructions on the label.

Salt-cured anchovies

These anchovy fillets have a concentrated, salty flavour. Use small amounts on toast, with olives, in salads or as a savoury ingredient in a sauce. Check whether the package requires refrigeration before opening; many anchovy products do.

Boquerones

Boquerones are vinegar-marinated white anchovies with a lighter, tangy character. The current Pujado Solano listings combine sunflower oil and white wine vinegar. Serve them with bread or alongside salt-cured anchovies.

Make a matrimonio tapa

Use purchased, ready-prepared anchovies and boquerones. Arrange a small portion of each on bread or a plate and add a little of the packing oil if desired. This combines the two flavours without preparing raw fish at home.
